Autumn Mushroom Risotto
Few dishes are as comforting when the cold begins as a good creamy rice. Autumn brings with it the high season for mushrooms, a wild ingredient full of aroma that fits wonderfully into everyday cooking.
Making a risotto at home often inspires a bit of awe, but it doesn’t require complex techniques. With a little patience, the right tools, and understanding how the rice grain behaves during cooking, the result is always perfect.
What makes a risotto different and the secret to its creaminess
Unlike a paella or a traditional soupy rice, where the cooked grain aims to be loose or swim in a light broth, risotto stands out for that buttery texture we love so much.
That magic is not achieved by adding cream or artificial thickeners. The key lies in two simple factors:
- The type of rice:using starch-rich varieties, such as Arborio or Carnaroli rice.
- The rubbing of the grain:stirring gently while adding hot broth little by little.
By stirring the rice frequently during cooking, the friction between the grains gradually releases starch. This starch emulsifies with the liquid and, when finished at the end with butter and Parmesan cheese (the famous Italian process known asmantecatura), that characteristic silky cream is created.
A seasonal dish full of nutrients
Mushrooms are one of the great gastronomic treasures of this time of year. Cultivated options such as button mushrooms or oyster mushrooms can be used, or one can take advantage of the variety offered by wild species such as porcini, chanterelles, or king oyster mushrooms.
- Low calorie intake and fiber:mushrooms provide a lot of volume and flavor with hardly any added fat, also aiding digestion.
- Minerals and antioxidants:they are a natural source of potassium, phosphorus, selenium, and B vitamins.
- Quality energy:rice provides slow-release carbohydrates that maintain energy throughout the day.
Preparation time: 35 minutes
Servings: 4 people
Difficulty: “Anyone can do it”
Utensils used: Vitrinor non-stick saucepan or casserole with a diffuser base (distributes heat evenly so that the rice cooks equally and the starch binds without sticking)
You will need:
- 300 g Arborio rice
- 300 g mixed mushrooms
- 1 onion
- 1 clove garlic
- 1 l vegetable broth
- 100 ml white wine
- 50 g butter
- 50 g grated Parmesan cheese
- A drizzle of extra virgin olive oil
- Salt and ground black pepper to taste
Step by step
Prepare the mushrooms and vegetables:clean the mushrooms with a damp cloth or brush to remove any soil and cut them into small pieces. Peel and finely chop the onion and garlic clove.
Sauté the base:heat a drizzle of olive oil in your saucepan and sauté the onion with the garlic over low heat for a few minutes.
Cook the mushrooms:add the chopped mushrooms to the pot and cook for 5-7 minutes until tender.
Toast the rice:add the Arborio rice and sauté for 2 minutes, stirring constantly so that the grains absorb the flavors.
Add the wine:pour in the white wine and cook for a couple of minutes over high heat until the alcohol evaporates.
Add the broth gradually:keep the vegetable broth warm in a saucepan nearby. Add it gradually to the rice as it is absorbed, stirring frequently.
Cook until al dente:continue cooking for 18-20 minutes until the rice is tender and creamy.
Finish the risotto:remove the pot from the heat and add the butter and grated Parmesan cheese. Mix well until both ingredients are fully incorporated.
Serve immediately:serve hot immediately and grate a little more Parmesan cheese on top.
Ideas and variations to customize it
- A touch of aroma:a couple of drops of truffle oil just before creaming give it an incredible nuance.
- More powerful broth:if you use dehydrated mushrooms like porcini, use the well-filtered rehydration water to add to the vegetable broth.
- Dairy-free version:you can perform themantecaturaby replacing the butter with a good drizzle of picual variety extra virgin olive oil and vegan cheese or nutritional yeast.
