Warm cabbage salad
Warm salads have something special about them: they are comforting without being heavy and smell like home cooking. This version, made with cabbage, is a different and delicious way to enjoy a vegetable that we tend to overcook. Here we treat it with more care: we blanch it just enough to make it tender, light and still full of character.
The dressing — a mixture of crushed garlic, cumin, paprika and olive oil — does the rest: simple, deep flavours full of nuances. In addition, cutting the cabbage into thin strips with a a knife well sharpened is key: more precision, more comfort… and much more safety. A small detail that makes the difference in the final result.

You will need:
Ingredients
• ½ cabbage, for example
• 2 cloves of garlic
• ½ teaspoon of cumin seeds
• 1 teaspoon of sweet or hot paprika
• Salt to taste
• 1 part of good vinegar
• 3 parts of oil of olive extra virgin
How is it done?
Chop and boil the cabbage. Remove the outer leaves and chop the cabbage into thin strips with a sharp knife; not only is it easier, it is also safer and helps to achieve even strips that cook evenly.
Bring water to the boil in a saucepan or pot with plenty of salt. When it comes to the boil, blanch the cabbage for 3–4 minutes, no longer. It should be tender but crisp; just right to really appreciate its flavour. Drain and set aside.
Prepare the paste. In a mortar, crush the garlic with the cumin and a pinch of salt. Add the paprika and the oil from olives extra virgin. Mix well: the smell will tell you that you’re on the right track.
Mix and serve. Place the cabbage in a bowl, pour the mixture over it and mix. Serve warm, when the aromas are most vivid and the cabbage still retains that point of texture that makes it so special.
Tip
You can add toasted seeds or dried fruit chopped.
This dish goes perfectly with some good brown rice or some protein grilled for a well-rounded and healthy meal.
