Spicy sweet and sour pork wok

There are days when the body craves a dish full of color, flavor, and contrasting textures, but there’s no time to spend hours in the kitchen. That’s where the wok becomes the undisputed king of the house.

Cooking with a wok is not only fun and fast, but it’s one of the healthiest and most versatile techniques available. Thanks to the heat distribution and constant movement, wok stir-frying allows food to be cooked at high temperatures in a matter of minutes. The result? Meat seared on the outside and extra juicy on the inside, along with vibrant vegetables that retain all their color, nutrients, and an irresistible al dente bite. The combination possibilities are endless!

Gastronomic review: Sauté or poach?

To achieve a top-notch dish, it’s essential not to confuse these two basic cooking techniques:

Sautéing (wok technique): Consists of cooking over very high heat, with very little fat or oil, and in record time. The food is continuously stirred or tossed to sear the exterior, caramelize natural sugars, and keep the juices trapped inside.

Poaching: It’s just the opposite. It’s cooked over low or medium heat, for a longer time, aiming for the vegetables to soften, lose water, and become transparent or tender without browning.

In this recipe, we’ll aim for a lively stir-fry: high heat, movement, and speed!

Preparation time: 20 minutes

Difficulty: Very easy

Portions: 4 people

Utensils used: Vitrinor wok

You need:

  • 500 g pork loin cut into strips
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1 carrot
  • 2 cloves of garlic
  • Sunflower oil
  • Salt to taste, carefully due to the soy sauce
  • Sesame seeds for garnish
  • 6 tbsp. soy sauce
  • 2 tbsp. honey
  • 1 tsp. fresh minced ginger
  • Chili flakes (adjust quantity to your spice preference)

Step by step

Prepare the ingredients: Cut the pork loin into thin strips and season lightly with salt and pepper. Peel and julienne the onion, slice the peppers into strips, and cut the carrot into thin sticks.

Sear the meat: Heat your Vitrinor wok over high heat with a splash of sunflower oil. Add the pork and stir-fry for 3-4 minutes until browned on the outside. Season with soy sauce, allowing it to caramelize. Add the honey and chili flakes, and stir-fry together. Remove the meat to a plate and set aside.

Sauté the vegetables: In the same uncleaned wok (to take advantage of the juices), add the chopped garlic and ginger, carrot, peppers, and onion. Sauté each batch over high heat for a couple of minutes, stirring continuously so they cook evenly but retain that crispy touch. Again, add soy and cayenne, sparingly 🔥.

Combine and glaze: Return the reserved pork to the wok. Stir vigorously so everything is coated.

The final touch: Cook for a couple more minutes over high heat. You’ll see how the honey lightly caramelizes, creating a bright, silky sauce that coats the meat and vegetables.

Plate and serve: Adjust salt if necessary and serve immediately in a bowl, sprinkling generously with sesame seeds.

Variations to expand your possibilities

The wok is a true blank canvas for culinary creativity. If you want to put a spin on this recipe based on what you have in the fridge, try these ideas:

  • Tropical touch: add diced fresh pineapple or mango in the last minute of cooking. The contrast with the cayenne’s spice is wonderful.
  • Crunchy version with nuts: incorporate a handful of toasted cashews or peanuts right at the end along with the sesame for an extra texture boost.
  • Plant-Based (Vegetarian) option: replace the pork with firm tofu cut into cubes (sear it well first in the wok) or with thick-sliced mushrooms.
  • Protein change: this same sauce and vegetable base works perfectly with strips of chicken breast, turkey, or peeled prawns.
