Pumpkin and Carrot Cream

We can’t turn a pumpkin into a carriage, but we have this delicious pumpkin and carrot recipe, so easy to make it will seem like magic. Oh, and you can enjoy it even after midnight.

Pumpkin is not just for decorating Halloween, it’s one of the vegetables that can give us the most versatility when the cold weather starts, and it’s perfect for making creams, either as a side dish or for a warm dinner on a winter night. Just as there are summer loves, there are autumn ones. This is the case for pumpkin and carrot; they make a perfect pair and combine wonderfully, even in color, to create a smooth and delicious cream with a very pleasant texture. For its preparation, you only need a good pot. Ready to make some magic?

Servings: 2 or more

Preparation time: 25 minutes, a little longer than it takes to go to the supermarket and buy it ready-made

Difficulty: magically easy

You’ll need:

For 2 people

  • 300 g pumpkin (peeled)
  • 2 carrots
  • 1 potato
  • ½ onion
  • 750 ml water
  • Olive oil, extra virgin is better
  • Pumpkin seeds or any you like
  • Salt

How is it made?

Start by clearing the ground: peel the carrots, potato, and pumpkin (be careful when doing so because its skin is quite tough; use a reliable, sharp knife and rest the pumpkin on the cutting board, don’t peel it in the air). Don’t put down the knife because now it’s time to cut the carrots, pumpkin, potato, and onion into small pieces.

We have the raw ingredients, now, let’s cook.

Sauté the onion with a drizzle of olive oil in the pot for a few minutes over medium heat until it’s softened. Then add the carrot and pumpkin, stir everything together, and cook over low heat for 10 minutes, until the vegetables are tender. If you see them sticking, add a little warm water or broth.

Add the potato and cover everything with water, add salt to taste, and cover, leaving a small opening.

Cook for 20 minutes, until the vegetables are tender, then transfer everything to a blender, either a jug blender or an immersion blender, it doesn’t matter, the point is to blend everything well to obtain a very creamy result. And that’s it! You now have a delicious orange cream to add color to your palate. Serve it with some seeds on top to make it more fun to eat, combining the creamy with the crunchy.

When seasoning, you can add pepper or nutmeg to give it a little more character. An interesting option would be to substitute the potato with sweet potato. In that case, you should add it along with the carrot and pumpkin, because it takes longer to cook than potato. The result will be even more orange and sweeter. You have plenty of autumn ahead to try variations…
