One-pot recipe: chicken with gnocchi and broccoli
A top-notch one-pot dish that includes carbohydrates, proteins, and vegetables. Balanced and tasty.
Servings: 2 people
Preparation time: let’s say half an hour
Difficulty: ridiculously easy
EQUIPMENT USED: a shallow casserole dish or Dutch oven, like this beautiful one from the Nordic range
You’ll need:
For 2 people
• 600 grams of chicken or turkey breast, cut into large pieces.
• To season the breast: salt, pepper, paprika, oregano, onion and garlic powder
• Oil and butter
• One leek
• 125ml cooking cream
• 125ml chicken broth
• Broccoli and spinach to taste
• Gnocchi (a bag of about ½ kilo)
• Parmesan cheese
How is it made?
Season the chicken breast pieces (depending on their thickness, you’ll need to cook them for more or less time) with salt, pepper, paprika, oregano, onion and garlic powder, and/or any spice you like.
Fry the seasoned chicken breasts in the casserole dish with a little oil and butter (which will give the dish a very good flavor). Cook until almost done. Remove and set aside the chicken.
Sauté the chopped leek in the fat remaining in the casserole dish until well softened. Then add the cream, chicken broth, and then the broccoli. Let it all cook until it reaches your desired consistency.
Finally, add the spinach, return the chicken to finish cooking for a moment, adjust the salt, top with grated Parmesan to taste, and serve.
