Chili con carne tacos, guacamole and red cabbage

Mexican cuisine is always fun and colorful, and this dish will be no exception. In this case, the red cabbage brings a colorful and crunchy touch. These tacos are a magnificent way to make the most of this winter vegetable. You’ll see how little effort it takes to make them with a frying pan and a saucepan. The filling incorporates a wide variety of different spices that will give an exotic and surprising touch to the final result.

You need:
For 2 people
- 1 tablespoon of olive oil
- ¼ teaspoon of ground clove
- 1 bay leaf
- 1 teaspoon of black pepper
- 1 tablespoon of cinnamon
- 2 tablespoons of cumin powder
- 1 teaspoon of salt
- 3 tablespoons of Worcestershire sauce
- 3 tablespoons of pure cocoa
- 30 g of chili powder
- 2 tablespoons of Sherry vinegar
- 220 ml of beef broth
- 1 kg of crushed tomato
- 1 kg of ground veal
- 3 cloves of garlic
- 1 large onion
- 2 avocados
- Juice of 2 limes
- ½ purple onion
- Salt
- Cilantro
- Raw red cabbage to taste
- Corn or flour tortillas for tacos.
How is it done?
Get started by finely chopping the onion and garlic. Then, let them sauté in a non-stick pan with a drizzle of oil over medium heat until they turn lightly golden and fill the kitchen with their tempting aroma.
Then add the tomato and bring it to a boil. Now it’s time to transfer this bubbling mixture to a pot and add the whole party of ingredients. From the clove to the chili, the Worcestershire sauce, the cocoa, don’t forget any! Mix everything well and let it simmer for 30 minutes while a delicious aroma fills your kitchen.
For the guacamole, simply mash the avocados in a bowl or mortar and add the onion and tomato chopped into tiny pieces. Add lime and salt to taste and finish with a handful of fresh chopped cilantro for an extra touch of freshness.
Now, the most exciting moment: assembling the taco!: place a generous portion of the chili mixture, a spoonful of guacamole, a few strips of red cabbage on each tortilla… Wow! Your tacos are now ready to enjoy.
